Fall Salad Recipe with Apples

Fall salads with apples are one of the quintessential fall cooking recipes everyone needs. September shares the beginning of autumn and the apple harvest season. So it’s no wonder we all feel drawn to the crispy sweetness that apples bring.

For this recipe, I used red fuji apples, but any red apple will do. However, I would stay away from green apples because they tend to be a tad bit sour. The sourness of the green apple may not blend well with the other ingredients in the salad.

Salad Dressing for Autumn Salad

All the ingredients in this fall salad have very distinct flavors that work very well together. I was nervous about what salad dressing to use because I didn’t want to upend the perfect harmony created between all the ingredients. I wanted something sweet but with a hint of sour to balance everything. I was looking for a recipe that contained a sweetener like honey or maple. Plus, it needed a kick of lemon or apple cider vinegar.

After testing a few salad dressing recipes, I settled on this one.

Apple Walnut Cranberry Fall Salad

Ingredients

Units Scale
  • 2 red apples
  • 3/4 cup unsalted walnuts
  • 1/2 cup feta cheese (optional)
  • 3/4 cup dried cranberries
  • 1/2 cup cooked quinoa
  • 50z Greens (I used baby spinach spring mix)
  • 3 cups kale, chopped

Instructions

  1. In a small saucepan, cook the quinoa and set it aside to cool. Cook the quinoa according to the instructions on the package. Also, use the package to cook the correct portion.
  2. Chop the apples into medium-sized triangles, (about 1 in.).
  3. Add all the ingredients to a large bowl. Make sure your greens are thoroughly cleaned. Then toss the salad ingredients together, gently equally distributing the ingredients.
  4. Serve with your favorite salad dressing. (See above for the salad dressing recipe I used).
