The secret is the addition of semisweet chocolate chips and a tiny pinch of cinnamon. If you have a few ripe bananas lying around, do not toss them out, instead use them for this delectable recipe. Vegan Banana Bread

If I could go back in time and tell younger me that adult me loves banana bread, I wouldn’t believe it! But this has made me a believer. What I love about this delicious easy banana bread recipe is that it easily becomes a vegan banana bread recipe. To make this a vegan recipe, simple swap each egg for 1/4 cup unsweetened applesauce. We can use this vegan substitute throughout baking. It does not drastically change the texture of the baked goods.

However, you do not want to use over 1 cup of unsweetened applesauce or the texture gets a little wacky. Lastly, when I substitute the applesauce for eggs, it makes the texture more soft and the bread more moist. This may mean that you have to bake the bread for just a few minutes longer. Use the toothpick test to keep a watchful eye on the doneness. You don’t want to over cook it.

Moist Chocolate Chip Banana Bread Recipe

Ingredients

3 large overripe bananas

1 egg or 1/4 cup applesauce if making a vegan version

1/3 cup plain Greek yogurt use plain vegan yogurt if making a vegan version
2 tablespoons coconut oil
1/3 cup brown sugar
1/4 cup maple syrup
1 1/2 tsp vanilla extract
1 tsp baking soda
1/2 tsp cinnamon (optional)
1/4 tsp salt

Instructions

  1. Preheat the oven to 350 degrees and prep the pan.
  2. Mash 3 ripe bananas in a bowl. Add eggs (or unsweetened applesauce), maple syrup, melted coconut oil, and yogurt. Use a spatula to fold the ingredients together.
  3. Add vanilla extract, cinnamon, and baking soda.
  4. Add brown sugar to the bowl and combine well.
  5. Now add your flour. I used whole wheat flour from Bob’s Red Mill. Gently combine well.
  6. Finally, add your chocolate chips and fold everything together. Then add the batter to the prepared pan. Bake for 45-50 minutes. Or until it passes the toothpick test.
