Don’t get me wrong, I love a good vanilla loaf cake and sometimes I crave an unusual loaf cake recipe, however, nothing beats a good chocolate cake! This is an easy loaf pan chocolate cake.

The secret to any good cake is not over baking it and keeping it moist. I made this chocolate loaf with oil, milk, and hot water to keep it moist.

Why use hot water for chocolate cake?

People often ask, why put hot water in cake batter? I add hot water to the chocolate cake batter toward the end of the preparation because it helps dissolve the cocoa powder and brings out the choco lately flavor. If you’re not sure how much boiling water to chocolate cake, I usually add about as much boiling water as I do milk.

Chocolate Loaf Cake with Chocolate Ganache

Ingredients

Units Scale

1 stick of butter (melted)

1 cup of sugar

1/4 cup vegetable oil

2 eggs

1/2 tsp vanilla extract

1/2 cup cocoa powder

1 tsp baking powder

1/4 baking soda

1/2 tsp salt

1 1/2 cups + 1 tbsp cup flour

1/4 cup milk

1/4 cup hot water

Chocolate Ganache Ingredients

8 oz chocolate bar roughly chopped, or chocolate chips

1 cup heavy cream or heavy whipping cream

1/2 tsp vanilla extract


Instructions

  1. Preheat the oven to 350 degrees and prepare your loaf pan.
  2. In a bowl, combine the melted butter, sugar, and vegetable oil until smooth.
  3. Add 2 eggs, one at a time, and the vanilla extract.
  4. In a separate bowl, combine the baking powder, baking soda, salt, cocoa powder, and flour.
  5. Use a rubber spatula to add the dry ingredients and milk to the wet ingredients. Alternate between adding the dry ingredients and milk to the wet ingredients, mixing in between.
  6. Add the hot water to the batter.
  7. Pour the batter into the loaf pan and bake for 45-55 minutes or until it passes the toothpick test. DO NOT OVERBAKE.

Chocolate Ganache Directions

  1. In a heat-proof bowl, add the chocolate. The smaller the chocolate pieces, the easier it will melt.
  2. In a small saucepan, heat the cream. DO NOT boil it.
  3. Pour the heated heavy cream over the chocolate. Let it sit for 1-2 minutes so the chocolate will soften.
  4. Then use a rubber spatula to combine the chocolate and cream. Once the ganache is silky smooth, it’s ready to pour over the cooled cake.
  5. Enjoy!
