How to Make Parmesan Crusted Salmon

This is my favorite easy salmon recipe to make for dinner any night of the week. The recipe only takes about 20 minutes to prepare and 25 minutes to cook. While the oven baked salmon is cooking, I use that time to make the sides. Here’s the basics of how to make this delicious parmesan crusted salmon recipe.

  1. Rinse and pat dry the fish with a paper towel. (Don’t skip this step. Remember that the fish likely comes from a factory and if you’ve ever seen the inside of food preparation factory that handles meat… yuck!) Patting the fish dry ensures that the live oil and salt will stick. Cover the fish in olive oil and sea salt. It is okay to be liberal with the olive oil here, however, I would go easy on the salt here since the breadcrumb mixture will also have salt.
  2. Combine the ingredients for the breadcrumb mixture (panko breadcrumbs, lemon zest, Parmesan, onion powder, garlic powder, Italian seasoning, sea salt, cayenne powder, and fresh parsley) in a bowl. Stir well to combine. Then taste the mixture. I always give it a taste at this point. Then use a spoon to cover the fish.
  3. Cover a baking pan with parchment paper and place the fish on the pan. Bake for 20-25 minutes at 350 degrees. Do not over bake the fish.

6 pieces of salmon3/4 cup plain panko breadcrumbs

1/4 cup fresh lemon zest

1/4 cup fresh minced parsley

1/2 cup Parmesan

1/2 tsp cayenne pepper

2 tsp Italian seasoning

1 tsp onion powder

1 tsp garlic powder

2 tsp sea salt for mixture

3 tbsp olive oil
